Whole Wheat Coffee Cake

"Fragrant with cinnamon and slightly sweet, this cakey bread is perfect for breakfast. If you are trying to learn to like whole wheat bread, here is a recipe that can help you make the transition toward whole grains."
Small loaf (1 lb.)	Ingredients		Large loaf (1 1/2 lb.)
2/3 cup			milk 			1 cup
2 TABLESPOONS		butter			3 TABLESPOONS
2 TABLESPOONS		honey			3 TABLESPOONS
1 1/2 teaspoons		active dry yeast	2 1/4 teaspoons
3/4 cup			bread flour		1 1/3 cups
3/4 cup			whole wheat flour	1 cup + 2 TABLESPOONS
2 TABLESPOONS		wheat bran		3 TABLESPOONS
1/2 teaspoon		salt			3/4 teaspoon
1			whole egg(s)		2
1			egg yolk		1
3 TABLESPOONS		brown sugar		1/4 cup
1 teaspoon		ground cinnamon		1 1/2 teaspoons
1/3 cup			raisins			1/2 cup
  1. Scald the milk. Stir in the butter and honey and let cool to room temperature.
  2. Add the milk mixture and all remaining ingredients except the brown sugar, 1/2 teaspoon of the cinnamon, and the raisins in the order suggested by your bread machine manual and process on the basic bread cycle according to the manufacturer's directions.
  3. At the beeper (or at the end of the first kneading in the Panasonic or National), add the remainder of the cinnamon, brown sugar, and raisins.
