We run out of egg substitute, milk, butter, whipped cream, peaches, and caffeinated coffee first. I think the rest can handle a doubling of production. So double those and we should have enough of everything.

Open Source Fat-Free Waffles

  1. 4c flour
  2. 1 tablespoon Molly McButter
  3. 1/3 cup sugar
  4. 1 teaspoon baking soda
  5. 1 teaspoon baking powder
  6. 1 1/4 cups egg substitute
  7. 3 1/2 cups skim milk
  8. 1 teaspoon vanilla
  9. 4 tablespoons water
  10. 1/4 teaspoon salt

Mix all ingredients together until smooth batter is formed - either by hand or with an electric mixer. Poor 1/2 - 2/3 cup batter on waffle iron and cook for about 6 min.

For BayCon we usually make about 8 batches which makes about 240 waffles.
