Russian Teacakes (Snowballs) -- 400 F

  1. Mix together thoroughly the butter, sugar, and vanilla.

  2. Sift together and stir in the flour and the salt.

  3. Mix in the nuts.

  4. Chill dough.

  5. Roll into 1" balls. Place 2.5 inches apart on untreated baking sheet.

  6. Bake at 400 degrees 10-12 minutes until set, but not brown.

  7. While still warm, roll in powdered sugar. Cool. Roll in sugar again.

[May 2017. 10 minutes was about right. The purple scoop is too big - if I use that next time, I should cut the scoopfulls in half and re-roll them. I lost four or six that broke when I tried to roll them in the powdered sugar the first time. I also added some blue edible glitter to the powdered sugar when I rolled them the second time.]

[Jan. 2018. I used Bob's GF flour and a little xanthan gum to make a GF batch.]

[*Dec. 2021. Instead of carefully sifting and measuring my flour and powdered sugar, I do my usual dipping of the measuring cups and bump up the butter by half a stick. Using the purple scoop and cutting them in half, I got 77 cookies.]
