Oatmeal Chocolate Bars

Filling
- 2 tablespoons butter

1 6-ounce package semisweet chocolate chips (1 cup)

1 5-1/3 ounce can evaporated milk

1/4 cup sugar

1/2 teaspoon vanilla
Crust

1/2 cup butter, softened

1 cup brown sugar, firmly packed

1 egg
-
1 1/4 cups flour
-
1/2 teaspoon baking soda

2 cups quick cooking oats
-
1 cup walnuts, chopped (which I left out)

Preheat oven to 350 F. Grease a 9" square baking pan. Prepare filling.

medium saucepan, combine all ingredients. Over medium heat bring to a
rolling boil, stirring constantly. Remove from heat and cool.
- Prepare crust. Cream butter. Add sugar and beat. Add egg and
vanilla
and
beat until light and fluffy. Stir in flour, baking soda, oats, and
walnuts.
Blend well.
- Spread half of mixture into bottom of prepared pan. Spread with cooled
chocolate mixture. Crumble balance of oatmeal mixture on top. (There was
no
crumbling for me. I placed it on top. LVB)
- Bake 25-30 minutes or until golden brown. Cool completely before
cutting
into squares.
Makes 36 bars.
