"Couple weeks ago, I started making an easy bar cookie I know, when I found out my graham cracker crumbs had gone off. I substituted almond flour, and they were DELISH."
Mix together. Spread in well-oiled 9x9 inch pan. Bake at 350F until set and golden. Allow to cool before cutting into bars.
* You can, of course, use any nuts and chips you like.
+ If you use graham cracker crumbs instead of almond flour, you can omit the egg.(How long it will take to become "set and golden?") I've only done it once, and only in one oven. I'd start checking it around 25 minutes. [And if you use a larger pan without doubling the recipe, they'll cook faster.]
[For Hanadoki Con 3, I used almond meal and walnuts.]

[May 2017. For Baycon, I used hazelnuts, and made my own nut meal mostly from hazelnuts. I added 1/2 tsp. baking soda. Next time I might try a full teaspoon, and I'll check it at 20 minutes.]
[Aug. 2018. I'm not bothering with the baking soda. It spreads out to be very thin but uneven, with the results that the thick parts don't cook as quickly. I'll try 25 minutes next time, and turning it halfway through.]
[Feb. 2019. I'm using almond meal, butterscotch chips, and hazelnuts. I'm making two single batches at a time, using my jellyroll pans, swapping and turning them halfway through.]
[May 2019. Same ingredients, using 9x13 pan and 30 minutes.]
[Nov. 2019. I think in the future I want to try putting the hazelnuts in after I've spread the batter in the pan.]
[Aug. 2021. Nope. 9x13 pan, nuts on top, 30 minutes: didn't cook all the way through, and nuts kept coming out when I cut the bars.]
